Pai Mu Tan is handpicked and gently processed in China. Only the youngest shoots and buds are used. The harvest is laborious, as only a short harvest period is available each year. Through gentle air drying, the tea retains its mild, floral taste. In this case, it is a 5-10mm cut variant of the tea. This allows it to be wonderfully processed further, for example, into tea or pyramid bags. This makes the tea easier for customers to use.

During the harvest, two leaves and one bud per shoot are carefully picked. The leaves are then gently dried, usually in the sun.
